Chocolate Sauce

Ingredients
- 6 oz chocolate, 61% to 66%, pastilles or chopped
- 1 cup (8 fl oz) heavy cream
Special tools and equipment needed:
- Heavy bottomed 1 qt sauce pan
Directions:
- Bring heavy cream just to the simmer, remove from heat.
- Add chocolate to the pan all at once.
- Cover and let stand for five minutes.
- Whisk until smooth.
- Store any remainder in the refrigerator for up to 3 weeks.
